No. III · Sophisticated
Aureus
Named for the coin, built for good company.
The aureus was Rome’s gold coin, and fig, grape and thyme moved through the same markets it paid for — staples of a Roman table, not luxuries reserved for the wealthy.
We built this one around that everyday abundance: fig and grape must for body, thyme for a dry, herbal finish. No garum here either — a fermented soft drink built to sit comfortably next to dinner.
Ingredients
- Sparkling spring water
- Fig syrup
- Aged grape must
- Thyme
Tasting Notes
Fig and grape up front — mellow, almost wine-like — with a dry thyme finish. The most sophisticated pour in the range.
